A different process from the first ferment, with a different failure mode

First fermentation is open, aerobic, and driven by the SCOBY converting sweet tea into an acidic culture over roughly one to three weeks. Second fermentation — F2 — is closed, anaerobic, and short. Its job is not to sour the brew further but to trap CO₂ and add flavour. The variable everyone is really managing is carbonation, and the failure mode is not spoilage but pressure.

How carbonation actually happens

Bottled kombucha still contains live yeast. Give that yeast fresh sugar in a sealed vessel and it produces CO₂ that has nowhere to escape, so it dissolves into the liquid. Three things follow from this:

  1. Some sugar source is required. Fruit, juice, purée, honey, ginger or plain sugar all work. Kombucha bottled with no residual or added sugar carbonates weakly.
  2. The vessel must actually hold pressure. Swing-top bottles and pressure-rated bottles do. Screw-top jars and repurposed containers vary, and mason jars in particular are not designed for internal pressure.
  3. Time is short and temperature-sensitive. Most batches reach good carbonation in 2–4 days at typical room temperature. Cooler rooms may take a week; warm rooms can overshoot in 36 hours.

Pressure is the real risk, and it is manageable

Sealed glass plus continuous CO₂ production is the one genuinely hazardous part of home kombucha. Standard practice among published brewers is to burp the bottles — briefly open one daily to release accumulated pressure — and to use a plastic test bottle as a gauge, since a plastic bottle becomes rock-hard when the batch is ready and gives a tactile reading through the wall without opening anything. Fruit-heavy and juice-heavy batches build pressure fastest and warrant more frequent checks.

Stopping the process

Refrigeration is the brake. Cold slows yeast activity sharply, effectively holding carbonation where it is and preventing further pressure build-up. Kombucha intended for storage should move to the fridge as soon as the target fizz is reached rather than being left at room temperature "to be safe" — the opposite is true.

Straining and sediment

F2 produces sediment: yeast strands, fruit solids and small new culture formations at the surface of each bottle. All are normal. Strain at bottling or at pouring according to preference; neither is a safety matter.

Where the numbers vary in the literature

Published ranges differ more here than in most ferments, because carbonation is judged subjectively and because room temperature, sugar quantity, bottle type and starting acidity all move the result. Treat 2–4 days as the centre of the distribution rather than a rule, and calibrate to your own kitchen after one or two batches.

What changes the time

  • Added sugar. The fuel for carbonation — more fermentable sugar means faster and stronger fizz, and faster pressure build-up
