The single most-asked fermentation question, and the one most often answered wrongly

A white film appears on a jar of pickles and the fermenter has to make a decision: eat it or bin it. Get it wrong in one direction and you throw away a perfectly good ferment; get it wrong in the other and you eat something you shouldn't. The distinction is genuinely learnable, and it comes down to texture and colour rather than to smell or to how alarming it looks.

Kahm yeast — flat, dull, harmless

Kahm is a catch-all name for several film-forming yeasts (*Pichia*, *Candida*, *Debaryomyces* among others) that tolerate salt and acid and grow at the brine surface where oxygen is available. Its signature is that it is flat. It lies on the surface like a skin, often wrinkled, folded or pleated, sometimes with a faintly crystalline or powdery look. It is white to cream to very pale beige. Push it with a spoon and it moves as a sheet or breaks into rafts rather than holding a shape.

Kahm is not a safety failure. Sandor Katz, in *The Art of Fermentation*, treats surface yeast as an ordinary and expected feature of open-air vegetable ferments rather than a reason to discard. It can, however, be a flavour failure: a heavy kahm layer left for days imparts a yeasty, slightly solventy off-note that carries into the vegetables underneath. Skim it whenever you see it.

Mold — fuzzy, raised, coloured

Mold is filamentous. It grows *up* from the surface as visible fuzz, and it holds structure — you can see individual hairs or a raised, velvety, cottony colony with a defined edge. Colour is the second tell: blue, green, black, grey and pink all indicate mold. Even a mold colony that starts white will usually develop a coloured centre as it sporulates, and it stays fuzzy throughout.

The conservative and widely published position — including from the National Center for Home Food Preservation — is that a moldy fermented vegetable batch should be discarded rather than salvaged. The visible colony is only part of the organism; the hyphae extend into the food, and some molds produce mycotoxins that are not removed by scooping off the top. "Cut an inch around it" is guidance for firm cheeses and firm produce, not for a submerged, high-moisture vegetable ferment.

Why kahm appears at all — and why it is preventable

Kahm needs oxygen. Every practical prevention measure is therefore a way of keeping vegetables under brine and air away from the surface:

  • Weights. Anything that holds the solids below the liquid line removes the interface kahm needs.
  • Airlocks. A one-way valve lets CO₂ escape while stopping fresh air from cycling in.
  • Adequate brine. Under-brined jars expose vegetable tops within a day or two as the ferment settles.
  • Temperature. Warm rooms speed everything, including surface yeasts, and shorten the window before lactic acid concentration suppresses competitors.

A practical decision procedure

  1. Look at the profile from the side. Flat and skin-like → kahm. Raised and fuzzy → mold.
  2. Look at the colour. White or cream throughout → kahm. Any blue, green, black, grey or pink → mold.
  3. Check whether solids are submerged. Floating vegetables are the usual cause of both problems.
  4. If kahm: skim thoroughly, wipe the jar rim, re-submerge, and continue.
  5. If mold: discard the batch, and wash and sanitise the vessel before reusing it.

The honest caveat

Early-stage mold can be white and can briefly look flat, and a thick kahm layer can look slightly raised. Where you genuinely cannot tell, time resolves it: mold develops colour and obvious fuzz within a day, kahm does not. And a ferment that smells putrid, cheesy or rotten rather than sour is failing regardless of what the surface looks like — that is a separate signal and it overrides the visual one.

What changes the time

  • Oxygen exposure. The single dominant factor — kahm forms only at an air/brine interface, so submerged solids largely prevent it
  • Temperature. Warmer rooms accelerate surface yeast growth alongside the ferment itself
  • Salt concentration. Below roughly 2% gives competitors more room; salt-tolerant kahm still grows but lactic acid dominates more slowly
  • Brine level. Under-filled jars expose vegetable tops as the ferment settles, creating the interface kahm needs

Common questions

Can I just scrape the mold off and eat the rest?

For a submerged vegetable ferment the published guidance is no. The visible colony is only part of the organism — hyphae extend into the food, and some molds produce mycotoxins that scooping does not remove. The "cut an inch around it" rule applies to firm cheeses and firm produce, not to high-moisture ferments.

My kahm keeps coming back after I skim it. What am I doing wrong?

Almost always the solids are not fully submerged. Kahm needs an air/brine interface, so it will regenerate as long as vegetables float. Add a weight, top up the brine to cover, and it usually stops returning.

Does kahm yeast ruin the flavour?

A thin film skimmed promptly generally does not. A thick layer left for several days does — it contributes a yeasty, slightly solventy note that carries into the vegetables underneath. Skim on sight rather than at the end.

Is white mold ever safe, like on cheese or tempeh?

On tempeh the white bloom is the intended culture (Rhizopus) and is correct. On salami and bloomy-rind cheese, deliberately inoculated white molds are also intended. On a jar of vegetable pickles, an uninoculated white fuzz is not intended and is the discard case.
